I first came across them in this viral TikTok video, and then Reddit kept confirming it, with threads calling mayak eggs a total game changer, like this one or even this chaotic ramen mashup.

So I made them. But instead of serving them over rice, I used Nongshim Shin Ramen Stir Fry, and accidentally created what I now call mayak ramyun.

What Are Mayak Eggs and Why Are They So Addictive?

Mayak eggs, sometimes called drug eggs, literally translate to "drug eggs" from Korean slang. The name means they're so addictive you can't stop eating them. Which is accurate.

Soft-boiled eggs marinated in soy sauce, garlic, sugar or syrup, onions, chili, and sesame. The whites absorb the savory marinade while the yolk stays creamy and jammy in the center. Normally served over rice. But as the internet proved, they work on almost anything.

How to Make Mayak Eggs at Home (Simple Recipe)

The key is getting the yolk jammy and letting the eggs sit in the marinade long enough to actually absorb flavor. Don't rush the marinating step.

Ingredients

  • 8 to 12 large eggs
  • 1/2 to 1 cup soy sauce
  • 1/2 to 1 cup water
  • 1/4 to 1/2 cup sugar, honey, or rice syrup
  • 1 to 3 cloves fresh garlic, minced
  • 1/4 to 1/2 onion, diced
  • 1 to 2 green onions, chopped
  • 1 to 2 chili peppers (optional)
  • 1 to 2 tablespoons sesame seeds
  • 1 to 2 tablespoons sesame oil (add before serving)
  • 1 tablespoon white vinegar (for boiling)

Step 1: Boil for a Jammy Yolk

Bring water to a rolling boil. Add vinegar and a pinch of salt. Cook eggs for 6 to 7 minutes, then transfer immediately to an ice bath. The timing here matters. Don't walk away.

Step 2: Peel and Marinate

Peel under water to keep the whites smooth. Submerge the eggs fully in the soy marinade and refrigerate for at least 12 hours, preferably overnight.

That's it. Classic mayak eggs.

This is where things got interesting.

Instead of rice, I made Shin Ramen Stir Fry. Unlike broth ramen, the stir fry version has a thick, concentrated chili sauce that coats every noodle.

I sliced the marinated egg over the noodles. The yolk blended straight into the spicy sauce.

The soy marinade added sweetness and umami depth. The garlic amplified the chili base. The sesame notes rounded out the heat.

This wasn't ramen with an egg on top. This was something else. I started calling it mayak ramyun.
