I first saw them in this viral TikTok video, and then I started seeing Reddit threads calling mayak eggs a total game changer like this post in r/EatCheapAndHealthy and even this chaotic ramen mashup in r/shittyfoodporn.

That’s when I decided to try them myself. But instead of putting them over rice, I used Nongshim Shin Ramen Stir Fry, and accidentally created what I now call mayak ramyun.

What Are Mayak Eggs and Why Are They So Addictive?

Mayak eggs, or “mayak gyeran” (마약계란), literally translate to “drug eggs.” The name is slang. It means they’re so addictive you can’t stop eating them.

Traditional mayak eggs are soft-boiled eggs marinated in soy sauce, garlic, sugar or syrup, onions, chili, and sesame. The whites absorb the savory marinade while the yolk stays creamy and jammy.

They’re usually served over rice. But as the internet proved, mayak eggs work on almost anything.

Ingredients

  • 8–12 large eggs
  • 1/2–1 cup soy sauce
  • 1/2–1 cup water
  • 1/4–1/2 cup sugar, honey, or rice syrup
  • 1–3 cloves fresh garlic, minced
  • 1/4–1/2 onion, diced
  • 1–2 green onions, chopped
  • 1–2 chili peppers (optional)
  • 1–2 tablespoons sesame seeds
  • 1–2 tablespoons sesame oil (add before serving)
  • 1 tablespoon white vinegar (for boiling)

Step 1: Boil for a Jammy Yolk

Bring water to a rolling boil. Add vinegar and a pinch of salt. Cook eggs for 6–7 minutes, then transfer immediately to an ice bath.

Step 2: Peel and Marinate

Peel under water to keep the whites smooth. Submerge the eggs fully in the soy marinade and refrigerate for at least 12 hours, preferably overnight.

That’s it. Classic mayak eggs.

This is where things changed.

Instead of serving the mayak eggs over rice, I made Shin Ramen Stir Fry. Unlike broth ramen, stir fry ramen has a thick, concentrated chili sauce that coats every noodle.

When I sliced the marinated egg over the noodles, the yolk blended into the spicy sauce instantly.

The soy marinade added sweetness and umami depth. The garlic amplified the chili base. The sesame notes rounded out the spice.

This wasn’t just ramen with an egg on top. This became mayak ramyun.
